Young Sheep cheese

Ingredienten

  • Sheep milk

Wezenspyk makes sheep cheese according to an old recipe and carries the label for sheep cheese that has been used for 500 years on the island. This semi-hard cheese is unique in its kind, not to be compared with another cheese. The cheese looks somewhat paler and drier and the taste can best be described as spicy, but not too sharp.

Orekees

Ingredienten

  • Sheep milk
  • Lamb's lettuce

Orekees is a typical cheese from Texel. Orekees is a cheese based upon the lamb’s lettuce. This is a saltwater plant that grows in the Texel nature district “the Slufter”. “The Pielsteert”, an old Texel sheep race, ate this plant in early days. Nowadays Texel sheep no longer eat this plant and as a result, the taste of sheep milk has changed. Adding this plant to the cheese, brings back the authentic taste.

It is worthy to mention that our Texel Orekees reached the final with “the Taste of Holland”! The Orekees also received the predicate “Super Gold” at the “World Cheese Award 2014”. The Orekees can be called the best Dutch cheese.

Fenugreek

Ingredienten

  • Cow milk, not pasteurized
  • Fenugreek seeds
  • Rennet
  • Lactic starter

The Latin name of Fenugreek is foenum-graecum, meaning Greek hay. In the past, Fenugreek seeds were added to poor hay, to improve the quality. Fenugreek seeds are rich in fats, vitamins (A, B, C, and E), calcium and phosphorous and have a positive effect on digestion and the immune system.

The cheese tastes a bit like nuts.

Suggestion: Very tasty in a salad.
